1.  Blood Orange Surprise

2.  Smooth Fruity Baking

Olive oil is great for your baking.  In fact I’ve used olive oil in my quick breads and loaves in place of butter and canola.  It’s that imagination about tasting the Mediterranean plus its unique fruity taste — something that canola or butter misses out on.

 

The trick they say is to use light tasting or mild flavoured, late harvest extra virgin olive oil (Karin’s oils are always extra virgin) because a full bodied one might be too much for your usual cookies or cakes.

If you want to use olive oil in place of butter you might want to try 3/4 of whatever amount of butter a recipe asks for.

The surefire advantage of olive oil in some sweet baked goodies is that it will help make everything tender and moist.  You just have to mix as little as possible as Marcy Goldman would tell you.

3.  Your Balsamic Tango

Of course Karin wants you to get the full taste for some of the finest that Europe has to offer — and that includes vinegars.  Two of her balsamic vinegars however really catch your eye — just because they use ingredients you might never usually see.

 

The first one is the pomegranate balsamic vinegar.  Pomegranate as you know is famed for its healthiness — it has a lot of anti-cancer chemicals in it (avoid prostate cancer), has good chemicals that fight weak bones and some studies have found that it can even boost your sex drive.  Combine that with the tang and health benefits of the balsamic vinegar itself and you’ve got a winning combination.

The second one is fig balsamic vinegar.  That’s often one you rarely see on a lot of shelves.  In fact, it’s an extra sweet balsamic (of course!).

This delightful vinegar is made in the Central Valley in California. The Balsamic Stock is imported from Italy and infused with the concentrate of sundrenched California figs. The sweet and fruity flavor of Fig Balsamic Vinegar is a perfect condiment for salads, cheese, and fresh berries. Roast or grilled meats flavor is enhanced when it is used as a baste.
